
I recently found this mix on sale at Fresh Market here in Richmond, VA and thought I would give it a shot. We had people over for brunch and this was to be part of it. I have to admit, I am much more of a cook than a baker – I do not bake that often. With that said, the muffins were tasty but to me, they were not the prettiest things. LOL. I am sure I could have done more to add some sugar on top etc. They didn’t rise like I was expecting – and perhaps it was operator error – but all of the fresh blueberries we added sank to the bottom. Was it me? We just decided to make them “Upside Down” muffins for our gathering. But they were good. Thoughts? Jen
On the Food channel they always toss the fruit in flour before adding it to the cake/muffin mixes. I haven’t tried it though:D
Try this stuff: http://www.cup4cup.com . My girlfriend has made me cookies with it, and I’ve made cake with it. Can’t tell a difference between regular flour and this stuff. Makes you forget about all these other mixes. Its not meant to be used for bread though.
